discuss the differences between red cabbage and green cabbage in terms of their
nutritional benefits.
Red cabbage
contains ten times more vitamin A than green cabbage. However, it's important
to note that the vitamin A in red cabbage is in the form of beta-carotene,
which needs to be converted into the active form (retinol).
Despite this,
beta-carotene offers numerous health benefits. Additionally, red cabbage
contains more vitamin C. For reference, adult males require 90 milligrams of
vitamin C daily, while females need 75 milligrams.
This is relevant
because sauerkraut, a fermented cabbage, obtained from a good source such as a
farmer's market, can provide up to 750 milligrams of vitamin C, which is
approximately 10 times the amount present in raw cabbage.
