The power that many people do not know exists in red cabbage

Today, we will discuss the differences between red cabbage and green cabbage in terms of their nutritional benefits.



Red cabbage contains ten times more vitamin A than green cabbage. However, it's important to note that the vitamin A in red cabbage is in the form of beta-carotene, which needs to be converted into the active form (retinol).

Despite this, beta-carotene offers numerous health benefits. Additionally, red cabbage contains more vitamin C. For reference, adult males require 90 milligrams of vitamin C daily, while females need 75 milligrams.

This is relevant because sauerkraut, a fermented cabbage, obtained from a good source such as a farmer's market, can provide up to 750 milligrams of vitamin C, which is approximately 10 times the amount present in raw cabbage. 




Fermentation significantly increases the vitamin C content. Moreover, red cabbage has twice as much iron and contains vital nutrient pigments.
